Week #43

I am not a good cook. I consider myself a relatively OK baker, but cooking just doesn’t inspire me. A couple of weeks ago, Lynne, from Thrifting Wonderland, posted this recipe. It looked delicious, and I figured even I could make it. So, I happily ordered almost all of the ingredients and made it Sunday night. I had forgotten what a mess frying chicken is! I used my Lodge cast iron skillet, but I may try searing the chicken in a tall pot the next time because you cook the other ingredients separately from the chicken and add that at the end. Let me tell you…it was delicious! I did use half and half instead of heavy cream because I’m always afraid I’ll get the wrong stuff. And, what ingredient did I forget? Well, it was the one that added color! I forgot the tomatoes. I do think they would have added a different texture and brightness to the recipe. I will definitely make this again, and I won’t forget the tomatoes! Nigel even liked it, and he usually doesn’t like main dishes with a creamy sauce.

I used to love cooking and am pretty good at it, but since menopause has given me so many food aversions and other food issues, I have lost my passion for cooking and food in general. Ugh. Menopause is such a weird thing, isn’t it? My biggest complaint was trouble sleeping, with hot flashes and just being overall antsy. Have a fabulous weekend, Shelbee! And, you’re very welcome!
I really enjoy cooking and trying new recipes. Your dish sounds delicious, but it would have been even better with the full cream! ha ha! Not as healthy though. Thanks for the party.
It is actually even better the second day! Like I said, I’m never quite sure which cream is full/heavy cream so half and half it was. I just need to remember the tomatoes next time.
